Peach-Pepper Chicken

4 chicken breast
1/2 teaspoon salt
1/4 cup butter or margarine
3/4 cup SMUCKER'S Peach Preserves
1 medium onion, sliced
1 tablespoon lemon juice
1/2 teaspoon ground ginger
1 medium green bell pepper, cut into strips
1 teaspoon cornstarch
2 tablespoons water

Sprinkle chicken with salt.

Melt butter in large skillet. Add chicken pieces and brown lightly on all sides.

Stir together SMUCKER'S preserves, onion, lemon juice, peppers and ginger. Pour over chicken, cover, and simmer for 10 minutes.

To Freeze: Freeze in freezer safe container.

To Reheat: Defrost. Cook over stovetop until chicken is cooked through. Add cornstarch to thicken sauce.
