Mini-Bacon Meatballs

4 strips bacon, diced
1/2 cup diced onion
2 clove garlic, minced
1 lb ground sirloin
1/2 cup dry bread crumbs
4 Tbsp minced fresh parsley
1 tsp paprika
1 tsp kosher salt
1 tsp black pepper
2 egg beaten

Cook bacon in a skillet over medium-high heat until starting to crisp, about 4 mins; remove and set aside on a paper towel lined plate. Pour off all but 2 Tbsp drippings from skillet. Saute onion in same skillet in the drippings over medium heat, until soft, about 3 mins. Add garlic to skillet; cook 1 min.

Combine sirloin, cooked bacon, onion mixture, bread crumbs, parsley, paprika, salt and pepper in a large bowl. Stir in beaten eggs. Form mixture into 1 inch balls.

To Freeze: Freeze in freezer safe container.

To Reheat: Bake at 400 for 10 minutes or until fully cooked.
