Chicken Squisito4 tbsp. olive oil
4 boneless, skinless chicken breasts
salt, pepper, onion powder, and garlic powder
1 med. onion, chopped
1 14.5 oz. can Italian seasoned diced tomatoes
1/2 cup chicken broth
1 cup shredded mozzarella cheese
1/3 cup grated parmesan
1/3 cup grated romano
Preheat oven to 375 degrees. Season chicken with powders, salt and pepper. In an oven-safe pan heat olive oil over over medium-high heat. When pan is hot add chicken and saute 2 minutes each side. Remove chicken. Saute onions in pan for 4 minutes. Add tomatoes and broth and cook for 8 minutes to blend flavors. Place reserved chicken in pan, stir to combine. Mix cheeses together and sprinkle over chicken. Bake about 15 minutes. Serve with rice or pasta.
To Freeze: Freeze in oven ready container.
To Reheat: Defrost. Bake 15 minutes or until cheese is melted and dinner is heated through.
