Apricot Pork Marinade

1 onion, chopped
1/2 cup apricot preserves, pureed
1/2 cup soy sauce
1/4 cup lemon juice
1/4 cup sherry
2 tablespoons oil
1/2 teaspoon ground ginger

Combine all ingredients and mix well. Marinate pork chops in a re-sealable bag for 3 to 4 hours.

To Freeze: Freeze in freezer safe container or zip-lock bag

To Reheat: Grill to desired doneness.
